I took Pierre Herme’s online class on PastryClass to learn about macarons, but there was so much more!

The final result was absolutely delicious and the flavors were exceptional. It gave me an even greater appreciation for the quality and expertise behind this classes.

I also wanted to add that what stayed with me the most was hearing Pierre Hermé share parts of his journey, his vision and his passion for pastry throughout the class.

It felt like much more than simply following a recipe or learning techniques. It was inspiring, motivating and, in some moments, genuinely moving to listen to his experience and the way he speaks about his work and creativity.

It made the whole experience even more memorable for me.

I have taken several courses on PastryClass by taking advantage of promotions, and the experience has been genuinely valuable to me. My absolute favorites so far are the classes by Ramon Morato and Ksenia Penkina.

What I loved is that they don't just teach you to follow a recipe blindly. The focus is on understanding the science and theory behind how a recipe works. Each pastry chef shares their unique mindset and knowledge, which serves as an inspiration to push my own limits and better understand pastry. In everything I prepare now, there is always some element, technique, or principle I took from these courses.

Additionally, I like that most courses are designed so you don't need high-end professional kitchen tools or specialized appliances to get results. There are a few exceptions, like the course by Jordi Roca, but given his style, you can't expect anything conventional 🙂. Even when a course requires advanced equipment, it is incredibly fun and insightful just to see the breakdown of what goes on behind his creations. There is always some inspiring part within the proposed recipes to take away.

I highly recommend PastryClass to anyone who wants to understand pastry beyond the recipe, not just make it, but truly get it.

When you spend this much on a pastry book you really are taking a gamble that it is worth it but this book is 1000% worth it! Communication with the team was also superb when I had an issue trying to order and the book arrived absolutely in the time promised. Terrible and expensive. I bought Ksenia Penkina's class and it was just videos of her talking about herself – a lot of "me me me me me". She talks like she is the top chef in the world. I emailed the Pastry Class team and they would not give me a refund, stating that they have a no refund policy.

Ma in realtà le lezioni contengono un mondo di informazioni.
Il dolce è realizzato step by step, con focus dedicati a ciascuna preparazione, con consigli e spiegazioni che davvero aiutano a capire il perchè di un procedimento o, soprattutto, a prevenire errori.
E ovviamente gli incredibili glassaggi: tecniche, scelta dei colori, problematiche delle glasse e come risolverle.
Le lezioni sono in un inglese abbordabile davvero per tutti, chiaro e con termini di facile comprensione.
Si puó entrare comodamente quando si vuole o richiedere aiuto se qualcosa non va.
E tutto questo senza spostarsi da casa.
Mi sono sentita davvero arricchita

I took Cedric Grolet's online masterclass and even tho it was in French, the translation was so perfect, chef was teaching so much, I really didn't expect to receive such knowledge, inspiration, motivation and skills. He shared his failure stories of how he started his career and his approach to growing ever year as a pastry chef. Of course I already practice making his Fruits pastries from that class (the Lemon and Apple), I've made Flowers as he calls them, which are actually tarts (the Rose and St Honore) the flavors were so elegant, and I did one Nut out of two - the Pistachio of course :) It really is a piece of art, and like any piece of art it must be done with patience and a lot of love for detail. I learned it from chef. Every time I rewatch the class I find new value, it was totally worth it! I also upgraded Cedric's class to Lifetime, it was exoensive but I didn't care, I can rewatch it all my life, practice and get inspired over and over. I never leave feedbacks haha but this is something important for me and really pushes me to create one of the best pastries in the industry. I spoke with the PastryClass team a few times and had only a fun and kind experience! Thank you for changing my pastry, my passion and I have to say getting many new followers is also a big thank you for that! Thank you Cedric and PastryClass! Can't wait to indulge in the next class and the next one! and the next one haha

PastryClass is an amazing platform that elevates both professional pastry chefs and enthusiastic home bakers by refining their skills. The experience is akin to personalized, one-on-one training. Having completed two classes so far, I’ve already applied what I’ve learned, and the results are unmistakably impressive.

Christophe Adam's class was a game-changer for perfecting choux pastry, especially with his tips on using a fan-forced oven. I actually did a happy dance in the kitchen when I saw the final result! No more burnt or misshapen éclairs. Each class is incredibly detailed and well-explained, making éclair prep seem like a breeze. My confidence in making éclairs has skyrocketed, and I can't wait to experiment with my own creations and flavour combinations.
