I recommend Sakai Genkichi, I ordered three knives made of Shirogami 2 steel. The sharpness is really great already in the production sharpening! After polishing on the 8000 stone and smoothing on the real skin, it cuts like a razor! The surface treatment, except for the edge, prevents rusting, so you only need to wipe the sharpened edge against rust. This traditional Japanese material really pleasantly surprised me how easy it can be sharpened, despite the hardness of 63HRC! Great Japanese masters! Keep your traditional Shirogami steel (white steel) for generations to come!
